Blueberry Breakfast Bowl

This is less a recipe than a good habit: cold yoghurt, sweet-tart fruit and something crunchy. It takes six minutes, needs no cooking, and holds you until lunch. A single 125 g pack of blueberries is about right for one generous bowl.

Ingredients

Serves 1

  • 150 g thick plain or Greek yoghurt
  • About 100 g blueberries
  • 1 tsp honey
  • A few mint leaves
  • 1 tbsp granola or chopped nuts (optional)

Method

  1. 1

Rinse the blueberries gently and dry them on a clean tea towel. Wet berries thin the yoghurt as they sit.

  2. 2

Spoon the yoghurt into a wide bowl and spread it into an even layer.

  3. 3

Set a few berries aside, and lightly crush the rest with the back of a fork together with the honey, so they release some of their juice.

  4. 4

Spoon the crushed berries over the yoghurt, then scatter the whole ones on top.

  5. 5

Tear the mint over the bowl, add the granola or nuts, and eat straight away while the granola is still crisp.

Tips for the best result

  • Thick yoghurt matters here. If yours is loose, strain it through a sieve lined with a clean cloth for 15 minutes.
  • Dried cranberries, chopped fine, add a tart chewy note if you want something more than fresh fruit.
  • Blueberries keep best cold and unwashed. Only rinse them just before you eat them.
