Dragon Fruit Parfait

Dragon fruit is mild and lightly sweet, so it needs partners with more character. Here it sits between a soft chia pudding and a crunch of toasted coconut. Ten minutes of work, but make the chia pudding ahead: it needs at least two hours to set.

Ingredients

Serves 2

  • 4 tbsp chia seeds
  • 250 ml milk (dairy or plant-based)
  • 1 tsp honey
  • 1 dragon fruit, white-fleshed
  • 4 tbsp thick yoghurt (optional)
  • 2 tbsp coconut flakes, toasted
  • A squeeze of lime (optional)

Method

  1. 1

Stir the chia seeds, milk and honey together in a jar. Leave for ten minutes, then stir again to break up any clumps.

  2. 2

Cover and refrigerate for at least two hours, or overnight, until it is a soft spoonable pudding.

  3. 3

Halve the dragon fruit lengthways, scoop out the flesh with a spoon and cut it into small cubes. Chill it until you are ready to assemble.

  4. 4

Spoon a layer of chia pudding into two glasses, then a layer of yoghurt if using, then dragon fruit. Repeat once more.

  5. 5

Top with the toasted coconut and a small squeeze of lime, which lifts the mild fruit. Serve cold.

Tips for the best result

  • Chia thickens as it sits. If it sets too firm, stir in a splash of milk before layering.
  • Chill the dragon fruit before serving. The flavour is faint at room temperature and much better cold.
  • The tiny black seeds in the flesh are edible and add a light crunch, so there is nothing to pick out.
