About Baby Bok choy
Baby bok choy is a small, tender Chinese cabbage. The pale stems are crisp and juicy and the leaves are soft and mild, so the whole head can be cooked with very little trimmed away.
Ways to use it
- Halved and steamed, then dressed with soy, garlic and sesame oil
- Quick stir-fries with ginger
- Dropped whole into noodle soups for the last minute
Choosing, storing and preparing
Look for firm, unblemished stems and glossy leaves with no yellowing. Rinse well at the base, where soil collects.
Storage: Refrigerate at 2-4°C in a vented bag; rinse just before use.
