Slice the stalks into salads and stir-fries, blend them into green juices and smoothies, or simmer them with onion and carrot as the base of soups, stocks and sauces. The leafy tops add a herby lift as a garnish. To keep celery crisp, wrap the stalks loosely and refrigerate at 2-4°C. Rinse well just before use and trim the base; limp stalks can be refreshed in a bowl of iced water for a few minutes.
