About Lime Leaves

Makrut (kaffir) lime leaves are glossy, double-lobed leaves with an intense citrus fragrance. They add aroma rather than bulk, and are used to flavour a dish rather than eaten.

Ways to use it

  • Torn into Thai curries and tom yum soup
  • Finely sliced into fish cakes and salads
  • Infused into rice, syrups and teas

Choosing, storing and preparing

Tear the leaves, removing the central rib, to release the oil. Whole leaves are usually taken out before serving.

Storage: Wrap loosely and refrigerate at 2-4°C; use within a few days for best aroma.
